Apple blueberry spring salad

An easy and quick take on a delicious spring salad with fresh fruits of the season. I used fresh blueberries and honey-crisp apples, with little bites of fresh goat cheese. Tossed with a refreshing and zingy ginger dressing, this salad is Spring in a bowl. Feel free to play with ingredients in your fridge and pantry.

What will you need

  • One 10 ounce pack of spring mix greens

  • One cup of fresh blueberries

  • One large honey-crisp apple thinly sliced

  • About 4 ounces of fresh goat cheese (I personally love using Laura Chenel goat cheese)

  • Toasted pine nuts

    For the dressing

  • One tablespoon of grated fresh ginger (helps balance the acidity and serves as an anti-inflammatory)

  • Two teaspoons honey

  • Juice from one whole lemon

  • Two tablespoons extra-virgin olive oil

  • Sprinkle of salt

  • Few dashes of freshly ground pepper

How to make it

  1. Prepare the dressing by whisking all the ingredients of the dressing in a small bowl. Keep it aside for later. Drizzle and toss in the salad right before serving.

  2. Spread the spring mix as a base in your favorite salad bowl or a large platter, and then arrange the blueberries, apples, piece the goat cheese into tiny bite sizes. Add the pine-nuts.

  3. When ready to eat, whisk the dressing if it has settled and drizzle over your salad.

  4. Toss gently and serve right away.

Notes

Skip the nuts if any allergies, or feel free to replace any nuts of your choice like toasted walnuts, pecans or sliced almonds.

Skip the cheese to make it vegan-friendly.

Play around with other fruits like fresh strawberry, dried cranberries, peaches or any seasonal fruit of your choice. Enjoy!
